Portuguese Kitchen

Culinary wealth
The true gastronome really up for an experience in Portugal. Portuguese cuisine is strongly characterized by delicious, rich meals with lots of influences from other cultures where Portugal previously had colonies. Think of Piri, Piri, typical chili peppers. Like the use of cinnamon, vanilla and saffron. Olive oil and garlic are basic and herbs such as coriander and parsley are often added to the mix.

Previously we mentioned that the country has a lot to offer for meat and fish lovers. Before we continue we’d like to mention that there is wide range of vegetarian dishes. Even celebrities such as the Dalai Lama and American artist Moby, vegan par excellence, are lyrical about various restaurants in Lisbon. For this you don’t have to be a vegetarian to enjoy it, that nice. Two famous restaurants are Jardim dos Sentidos and Green Pepper.

Fish and seafood
Portugal offers many types of fish. A famous Portuguese fish is Bacalhau. Known to us as cod but dried and salted. Locals are so fond of it that there are 365 ways to prepare this fish. For each day of the year another recipe. Fish is, amongst other, being boiled, grilled, roasted and fried. And not to be forgotten are ardines, which are very popular. Especially grilled and served with a tasty Portuguese white wine.  Octopus, squid, crab and shrimp are also represented nationwide. A typical Portuguese dish is the Caldeirada. This is a Stew of fish and shellfish which is served with potatoes, tomato and onion.

Meat and poultry
During the Middle Ages meat was only for the upper class.Today no more. A traditional Portuguese dish is the Cozido á Portuguesa. This is a variety of different types of meat and ingredients prepared by the cook. Ask the chef how it is prepared, as this varies by restaurant. A good Cozido includes beef, pork, pork sausage, black pudding, pig feet, ham, salted pork, potatoes, carrots, chickpeas, cabbage and rice. . Custom anywhere around, you can get a piece of porc meat or beef, bife. Served with a sauce based on wine, fries or baked potatoes, rice and salad.

Cheese Types
Portugal also offers a selection of different cheeses from goat and sheep milk or both.  For instance the very popular spicy cheese, Queijo de São Jorge, that is originated from the Azores. Although this is made from cow's milk. Despite the many types of cheese Portugal offers, such as the Azeitão Queijo, Queijo de Castelo Branco and Queijo da Serra da Estrela,  they are not used for the preparation of food. It is rather served as an aperitif or dessert.

Wines
Don’t look strange if you’re asked to prefer a red, white or green wine. Green has nothing to do with the colour of the wine and everything to do with age. Green wine should also be drunk young. This popular Vinho Verde comes from the Northwest, from the province of Minho. De kleur is rood, wit of rosé.The colour is red, white or pink. Rose, very popular in Western Europe, is not as popular with the Portuguese.

Do you like Port Wine, a visit to the Port Area in the Northwest is really worthwhile. There are several Port houses in Porto, such as Sandeman. Nice to pay a visit and delicious to have a taste.
